Cranberry Orange Bread

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat pasty flour
  • ¾ cup white sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup cranberries, halved
  • ½ cup chopped walnuts (optional)
  • ¾ cup orange juice (3 oranges)
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 tablespoon orange zest
  • 1 teaspoon cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)

Preparation

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Combine flour, sugar, baking powder, salt, and baking soda in a large bowl. Add cranberries and walnuts; stir until well coated.
  3. Mix together orange juice, egg, oil, and zest in a medium bowl until combined. Pour over flour mixture; stir until just blended. Spoon batter into the prepared loaf pan.
  4. Bake in the preheated oven until a toothpick inserted into the center of loaf comes out clean, about 50 minutes. Let cool in the pan briefly before removing to a wire rack to cool completely.
