Fruity Brownie Pizza

A luscious treat that’s sure to impress company. Add mandarin oranges for even more color.

Ingredients

  • 1 package fudge brownie mix (8-inch square pan size)
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 3/4 cup pineapple tidbits with juice
  • 1 small firm banana, sliced
  • 1 medium kiwifruit, peeled and sliced
  • 1 cup sliced fresh strawberries
  • 1/4 cup chopped pecans
  • 1 ounce semisweet chocolate
  • 1 tablespoon butter

Preparation

  1. Preheat oven to 375°. Prepare brownie batter according to package directions. Spread onto a greased 12-in. pizza pan. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool completely. 
  2. In a large bowl, beat cream cheese and sugar until smooth. Spread over brownie crust. Drain pineapple, reserving juice. Toss banana slices with pineapple juice; drain well. Arrange banana, kiwi, strawberries and pineapple over cream cheese layer; sprinkle with pecans. 
  3. In a microwave, melt chocolate and butter; stir until smooth. Drizzle over fruit. Cover and refrigerate for 1 hour.

Notes

  • Depending on your preferences, you can try adding blueberries, raspberries, sliced peaches, or cubed melon. If you don’t want a cream cheese frosting on your fruit brownie pizza, try a more traditional vanilla or chocolate frosting instead. 
  • You make the brownie crust and cream cheese frosting the night before serving. Just make sure to save adding the fruit and drizzling chocolate until the day of serving, so that the fruit stays super fresh.
  • You can store fruit brownie pizza in the refrigerator in an airtight container. Although brownies can typically last up to a week in the fridge, cut fruit only lasts around 3 days before it starts to oxidize and turn brown.
