Potato Salad

Ingredients

  • 5 lbs potatoes
  • 10 eggs
  • 3/4  jar Hellmann’s Mayonnaise
  • 7 green onions (finely chopped)
  • 3-4 stalks celery (finely chopped)
  • 1 carrot shredded 
  • Paprika
  • 1 teaspoons of salt

Preparation

  1. Boil potatoes then skin and cut into quarters or eighths.
  2. Mix the onions, celery and carrots together in a separate bowl.
  3. Cut most of the eggs into quarters or eighths. Slice the others for the top.
  4. Mix half of the mayo, mixed vegetables, potatoes and eggs together when well mixed add the other half of the ingredients and mix well.
  5. Refrigerate to chill then serve.
