Ingredients
- 5 lbs potatoes
- 10 eggs
- 3/4 jar Hellmann’s Mayonnaise
- 7 green onions (finely chopped)
- 3-4 stalks celery (finely chopped)
- 1 carrot shredded
- Paprika
- 1 teaspoons of salt
Preparation
- Boil potatoes then skin and cut into quarters or eighths.
- Mix the onions, celery and carrots together in a separate bowl.
- Cut most of the eggs into quarters or eighths. Slice the others for the top.
- Mix half of the mayo, mixed vegetables, potatoes and eggs together when well mixed add the other half of the ingredients and mix well.
- Refrigerate to chill then serve.
