Ultimate Veggie Sandwich

Ingredients

  • 4 slices Whole Grain Bread
  • 2 tablespoon Hummus
  • 2 tablespoon Pesto
  • 2 tablespoon shredded carrots
  • 8-12 slivers of Red Onion
  • 8-12 slivers of Red Bell Pepper
  • 8-12 slices of Cucumber
  • 1/2 cup Sprouts, or microgreens — rinsed
  • 4-8 leaves Romaine Lettuce
  • 1/2 medium Apple, thinly sliced
  • 1/2 medium Avocado, sliced
  • 4 teaspoons Crunchy things: Pepitas, Sunflower Seeds, Roasted Chickpeas, etc
  • Salt and Pepper, to taste

Preparation

  • Spread the basil on the top of one slice of bread, hummus on the bottom.
  • Add the carrots, peppers, onions, cucumbers, lettuce, sprouts, apples and avocados. Sprinkle pepitas/sunflower seeds on top of avocados.
