Ingredients
- 4 slices Whole Grain Bread
- 2 tablespoon Hummus
- 2 tablespoon Pesto
- 2 tablespoon shredded carrots
- 8-12 slivers of Red Onion
- 8-12 slivers of Red Bell Pepper
- 8-12 slices of Cucumber
- 1/2 cup Sprouts, or microgreens — rinsed
- 4-8 leaves Romaine Lettuce
- 1/2 medium Apple, thinly sliced
- 1/2 medium Avocado, sliced
- 4 teaspoons Crunchy things: Pepitas, Sunflower Seeds, Roasted Chickpeas, etc
- Salt and Pepper, to taste
Preparation
- Spread the basil on the top of one slice of bread, hummus on the bottom.
- Add the carrots, peppers, onions, cucumbers, lettuce, sprouts, apples and avocados. Sprinkle pepitas/sunflower seeds on top of avocados.
