Greek Chicken Pitas

These pitas can be made with or without the chicken. Either way they are mighty tasty.

Ingredients

  • The Pitas
    • 4 Pita pockets
    • 2 tablespoons olive oil
    • 1 teaspoon of oregano
    • 1 cup feta cheese crumbles
    • ¾ cup red onions
    • ¾ cup of cherry tomatoes halved
    • 1 medium English cucumber, peeled and thinly sliced
    • ¾ cup of tzatziki
    • Handful of chopped kalamata olives
    • 5 or 6 jarred pepperoncini, sliced
  • The Chicken
    • 1 pound chicken breasts
    • 1 tsp Kosher salt
    • 1 tsp fresh cracked black pepper
    • 1 tsp garlic powder
    • 1 tsp dried oregano
    • 1/4 tsp crushed red pepper flakes
    • 1/2 lemon
    • Olive oil

Preparation

  1. The Chicken
    • Place each chicken cutlet between 2 pieces of parchment paper, using a rolling pin or meat tenderizer on the flat side, pound the chicken out until it is 1/4 inch thick
    • Mix the salt, pepper, garlic powder, oregano, red pepper, lemon juice and two tablespoons of olive oil. pour onto the chicken and let it marinate while you chopped the vegetables.
    • Heat another 2 tablespoons of olive in a pan on medium heat. Cook the chicken about three minutes per side. Once cooked let it rest 5-6 mins before slicing.
  2. The Pitas
    • Mix 2 tablespoons of olive oil and oregano and spread it onto the pitas.
    • Cook the pita in a heated pan about 1 minute per side.
  3. Final Assembly
    • Smear about 2 tablespoons of tzatziki on each cooked pita and top each with chicken, feta, pepperoncini, cucumber, tomatoes, kalamata olives and red onions.
