Guacamole No Tomatoes

Ingredients

  • 2 or 3 scallions, thinly sliced, dark green parts only. (substitute a couple of tablespoons of a diced red, white or yellow onion)
  • 1/2 jalapeño pepper, seeded and finely diced
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1 clove of garlic, minced
  • 1/2 teaspoon ground cumin
  • 2 avocados

Preparation

  1. In a medium bowl mash the avocado.
  2. Add garlic, green scallions, jalapeño, salt, cumin, and lime juice. Stir with a fork until blended.
