Homemade Caesar Salad with Mayo

Ingredients

  • 1 small garlic cloves, minced
  • 1/2 teaspoon anchovy paste
  • 1 tablespoons freshly squeezed lemon juice, from one lemon
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup mayonnaise
  • 1/4 cup freshly grated Parmigiano-Reggiano
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Preparation

  1. In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce.
  2. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined.

Notes

  1. The dressing will keep well in the fridge for about a week.
  2. This amount of dressing should be more than enough for Chicken Caesar Wraps
