Ingredients
- 4 cups of frozen corn
- 1/4 cup cilantro, chopped
- 1/4 cup crumbled Cotija cheese or feta
- 1/4 cup diced red onion
- 1 Tablespoon unsalted butter
- Salt and Pepper
- Tajin (Chili Lime Seasoning)
- Sauce
- Option 1 (Use either option 1 or option 2)
- 1/4 cup sour cream or 2 Tbl mayo and 2 Tbl of sour cream
- 1/4 teaspoon smoked paprika, paprika or chili powder
- 1 Tablespoon fresh lime juice
- 3/8 teaspoons cumin
- Option 2
- 1/4 cup of Chipotle Aioli Recipe
- 1/4 cup of Chipotle Aioli Recipe
- Option 1 (Use either option 1 or option 2)
Preparation
- Warm the corn on a pan grill pan until the kernels are slightly charred. Abour 3-5 minutes.
- Add the kernels and diced onion to a large bowl, and while it is still warm, stir in the butter, sour cream, lime juice, paprika, cumin, cilantro, Cotija cheese, and a dash or tajin or salt and pepper
- Taste and season the salad with additional salt and pepper as desired. Serve immediately.
Notes
For a dip double the dressing to make it saucier.
Make Up to a day ahead so the sauce can mend with the corn.
Queso fresco, grated Parmesan cheese or crumbled feta can all be used in place of Cotija cheese.
