Roasted Cherry Tomatoes
A great snack or appetizer made with cherry tomatoes.
- Cherry Tomatoes
- Salt and Pepper
- Chopped Thyme
- Chopped Basil
- Olive Oil
- Preheat the oven to 250°F.
- Halve a few pints of cherry tomatoes, arrange them cut side up on a cooling rack set over baking sheet and season with salt, pepper and a little freshly chopped thyme.
- Drizzle with olive oil and roast for 1 1/2 hours.
- Chop tomatoes or use as-is on toast , topped with chopped basil and shaved parmigiano-reggiano.
