Roasted Cherry Tomatoes

A great snack or appetizer made with cherry tomatoes.

Ingredients

  • Cherry Tomatoes
  • Salt and Pepper
  • Chopped Thyme
  • Chopped Basil
  • Parmigiano-Reggiano
  • Olive Oil
  • Baguette

Preparation

  1. Preheat the oven to 250°F.
  2. Halve a few pints of cherry tomatoes, arrange them cut side up on a cooling rack set over baking sheet and season with salt, pepper and a little freshly chopped thyme.
  3. Drizzle with olive oil and roast for 1 1/2 hours.
  4. Chop tomatoes or use as-is on toast , topped with chopped basil and shaved parmigiano-reggiano.
