Tuna, Cucumber and Mozzarella Salad


  • 4 cups lettuce spring mix
  • 1 (5-ounce) can tuna, drained
  • 4 Bocconcini mozzarella balls
  • ½ English Cucumber
  • 1 small shallot
  • ⅔ cup sweet corn, cooked and chilled
  • ½ recipe lemon vinaigrette


  • Thinly slice the mozzarella balls, cucumber, and shallot.
  • In a large bowl, add the lettuce and top with the tuna, mozzarella, cucumber, shallot, and corn. Drizzle with the lemon vinaigrette and stir to combine.
