Spice-Rubbed Tilapia with Tomatillo, Black Bean & Mango

A go to recipe for both the tilapia and salad. The combination together is excellent plus any left over tomatillo, black bean and mango salad can be a snack for later in the day. My recipe which is listed below differs from the source as I used half of the ingredients for the salad, though the entire mango. For the tilapia I used the only 3/4 a teaspoon of chili pepper but all of the other ingredients.

Tomatillo and Avocado Salsa

Tomatillo and Avocado Salsa

The recipe was found in two places at Fine Cooking. Though they were similar, I used the recipe that was include with the quinoa and black bean burger. It called for a 1/2 teaspoon more of the white part of a scallion and a 1/2 teaspoon more of serrano chile. Additionally since I did not have either a scallion or chile on had I substituted a white onion and jalapeno.

Salsa

Salsa

4 large ripe tomatoes, chopped
½ cup chopped white onions (scallions, red or yellow onions can be substituted)
1 medium clove of garlic, finely chopped or grated
¼ cup of cilantro
1 jalapeno or 2 serrano peppers (more depending on your taste).
— Trimmed, ribs removed, seeded & finely chopped (add seeds to increase hotness)
1 teaspoon dried oregano
1 lime, juiced.
